Recipe for March 30th
(Our kids LOVE this one)
Vegan Banana Bread
Now, I am not Vegan, by ANY stretch of ANYONE"S imagination. But with Sam's food allergies
We have to make a lot of food for him dairy or egg free, which just so happens to end up vegan a lot
of the time. My Manager, Sarah (Vegan extraordinaire), loves it.
Cream together, WELL, 1/3 cup shortening
Add gradually 2/3 cups sugar, until light and fluffy.
Add and beat well 1/2 cup applesauce and 2TBLS corn starch
Add 1 3/4 cups flour
1/4 TEAS baking soda
2 TEAS baking powder
1/2 TEAS salt, and mix together slightly
Then add mashed up bananas, 1 cup worth. Which is about 2 to 3 bananas.
Mix well, then put into a well greased bread pan. (It can make one Large loaf, or two small loaves.)
Bake at 350 Degrees for one hour.
(Joe's delicious touch is to top it off, while hot, with a melted butter (Blue bonnett light) and brown sugar glaze)
Holy crap its good!!!
